Stir Fry Recipe on Sauces

Stir fry is an old ancient way of cooking dishes which is known to be very quick and easy. As it is quick it is also economical when utilizing fuel is concerned. 1. THE CHINESE PLUM SAUCE:

Ingredients:

3 pounds plums

2 pounds peach

3 sweet red peppers, diced

4 large cloves of garlic, minced

1 onion, minced

4 cups cider vinegar

one ½ cups of water

½ cups cooking sherry

1 teaspoon soy sauce

1 ½ cup white sugar

one ½ cup packed light brown sugar

1 tablespoon ground ginger

one tablespoon pickling salt

1 tablespoon dry mustard powder

one teaspoon cayenne pepper

one teaspoon cinnamon

1 teaspoon cardamom

PROCEDURE:

Steam and blanch the plums and peaches for about 2 minutes, doing only 1 pound at a time. Do not overcrowd your pan. Skin and removed the pits.

In another large kettle, you can combine all the ingredients. Bring the kettle to a boil and then lower the heat to simmer for another 1 ½ to 2 hours, until the fruit falls apart and the syrup is quite thick enough. Please stir them frequently to avoid scorching or burning.

Ingredients:

one ½ teaspoon sesame oil

½ teaspoon minced fresh ginger

½ teaspoon minced garlic

1/3 cup chicken broth

2 whole anise stars

1 ½ teaspoon red wine vinegar

one tablespoon soy sauce

½ teaspoon salt

one teaspoon hoisin sauce

1/8 teaspoon Tabasco sauce

1/8 teaspoon red pepper flakes, crush them into bits

¼ teaspoon pepper

1/8 teaspoon 5 spice powder

one tablespoon of water with dissolved 2 teaspoon cornstarch

PROCEDURE:

Heat the oil into a small sauce pan. Add the ginger and garlic and saute for about 12 minute, until softened but not brown. In another bowl, please combine the remaining ingredients, saving the cornstarch mixture for later. Add them to the saucepan and bring to a simmer, covered, for about 10 minutes. Remove the star anise. Whisk in the cornstarch mixture and let it boil for another 1 to 2 minutes. Taste and add more Tabasco of desired. This is now ready for any stir fry cooking.

Start Of A Gluten Free Healthy Diet

When we had to go wheat free and gluten free with our diet, we found it to be quite a journey. It takes time to learn how-to go gluten free, as well as how to shop, how to prepare food, and what you can and can't eat.

Recently, we were finally able to determine one of the things that has been triggering Denis' stomach issues, allergy symptoms, and other health concerns. The food which he can eat is a lot less than the food that he can't.

All of these challenges started around 20 years ago. Shortly after we came back from living in Germany for several years, he started having a nominal amount of hypersensitivity to some food and alcohol. As the years moved on, he accumulated more and more allergies.

Every three years or so, he would have an allergy examination done, and each time the list was a bit longer. His allergies consist of both foodstuff and environmental.

There was no help, no one had any real adice. He couldn't go on avoiding more and more of life, along with life's joys. It came time that we did something, so we began to research potential reasons, and exactly how we might put a stop to the expanding list of allergies.The things we found out with our groundwork was quite insightful.

We came across a book named Wheat Belly. The deeper we got into that book, the more we realized why and how he had been experiencing all these troubles.

What we found out is: * wheat is in just about everything that we ingest. * our present-day, genetically modified wheat is just not healthy for us. * how wheat is a concern for our system. * eating as much wheat as we do has long-lasting undesirable effects. * why, and the way we should be eating wheat free.

Approximately five months from the time we started on our journey to healthy eating, Denis started truly recognizing that he was beginning to feel much better than he had in years. In addition we both observed that we were losing inches around our middle - our stomach fat was diminishing.

Even though I don't have many stomach problems, I made a decision to back up Denis' decisions by reducing wheat too. Even though I am making the adjustments more slowly than he is, I have observed several changes in myself also. This has made me much more motivated to become more focused on getting wheat free.

Months later, plus a cross-Canada trip.

Throughout our trip, we got a little lazy with keeping up with our eating plan, and it showed in how we felt by the time we got to our destination. When we got here, we believed it was the perfect time to get back to our normal eating plan.

We have got back to the basics - removing wheat from the diet once again.

At this stage in our learning, we discovered another potential problem and answer for Denis. We learned that he's got all the symptoms of being gluten intolerant. So we began an additional journey - eliminating gluten from our diet

Since we've gone totally wheat free and gluten-free, the visible difference in how he looks and feels is just incredible.The best news is the fact that he is feeling fantastic. His system is winning the battle, and he is healing.

I see a change with me as well now. I never imagined that I had any difficulty with wheat or grains, yet now that I am mindful of exactly what I consume too, I really ntoice a heaviness and sometimes get indigestion after I have something that contains wheat.

Our bodies are slowly adjustingto a much better method of eating.

Gluten-Free Eating

There is no way for any individual to find out if they may be truly gluten intolerant other than to remove gluten from their diet, and then determining whether or not it makes them feel better. Once Denis did exactly that, and began feeling fantastic, that was more than enough to totally validate our diagnosis.

We're still learning. The approach to being fully and absolutely wheat and gluten free is gradual. We have had to adapt our shopping, our food preparation, and our eating routine.

The good news is, there are lots of excellent gluten free recipes and suggestions to be found.

For the moment, we are concentrating breakfast, lunch, and dinner dishes. Luckily for us neither of us really cares for baking, so that can easily hold off until we are much more settled in our new meal regimen.

There is no need for you to suffer with indigestion or a stomach upset. The problem is often due to intolerance to some food. It is a common problem, and it is happening to more and more people every day.

A 3 Course Meal Guaranteed to Please

From time to time, we cook, even better when we cook for someone else. Even better when we want to cook and impress female company. Below is a well rounded 3 course meal that any man can cook, that your partner will love.

Starters

Salmon Carpaccio

Preparation - 20 Minutes + Refrigeration Serves - 8

Ingredients

½ Medium green capsicum (bell pepper) (100g) diced finely

2 green onions (scallions, chopped finely

400 g piece sashimi salmon, sliced thinly

1 tablespoon free dill sprigs

2 tablespoons lime juice

2 tablespoons extra virgin olive oil

Method

Combine capsicum and onion in a small bowlArrange salmon slices on a large plate. Sprinkle with capsicum min, then top with dill. Drizzle with juice, then oil, season.Cover Salmon. Refrigerate 1 hour.

Servicing suggestions

Scatter micro leaves over salmon. Serve with thinly sliced toasted bread.

TIP - Cut the salmon as thinly as you like. Freezing the piece of salmon for about 1 hour will make it easier to slice finely. You can finely slice the partly frozen fish using a mandoline or a V-Slicer.

Main

Butterflied Lamb With Fresh Mint Sauce

Preparation + Cook time 40 minutes (+refrigeration and standing) Serves (10)

Ingredients

½ cup (90g) honey

1 tablespoon wholegrain mustard

2 kgs butterflied leg of lamb

¼ cup loosely packaged rosemary sprigs

For Mint Sauce

½ cup (110g) firmly packed light brown sugar

½ cup(125 ml) water

1 1/2 cups (375ml) cider vinegar

½ cup finely chopped fresh mint

Method.

Make mint sauce. Stir sugar and the water in a small saucepan over heat, with out boiling , until sugar dissolves. Bring to the boil. Reduce heat and simmer, uncovered, with out stirring, 5 minutes or until the syrup thickens slightly. Combine syrup, vinegar and mint in a small bowl.Combine a quarter of the mint sauce, honey and mustard in a large shallow dish. Add lamb turn to coat in marinade. Cover and refrigerate for 3 hours or overnight, turning occasionally. Refrigerate remaining mint sauce separately.Drain Lamb, and place, fat side down on heated oiled grill plate (or grill or barbeque). Cover lamb loosely with foil and cook about 10 minutes or until browned underneath. Uncover; turn lamb, sprinkle with rosemary. Cook, covered, about 10 minutes or until cooked as desired (or cook by indirect heat in covered barbecue following manufacturer's instructions. ). Remove from heat; stand covered, 15 minutes.Slice lamb thinly. Serve with remaining mint sauce.

Serving suggestion - Serve with baby potatoes and a tomato and radish salad. The mint sauce can me made several days ahead. Ask the butcher to butterfly a leg of lamb for you.

DESSERT

Raspberry nougat frozen parfait.

Preparation + Cook time - 25 minutes (+freezing and refrigeration) Serves 8

Ingredients

2 cups (400g) ricotta Cheese

¾ cup (165g) caster (superfine) sugar

¼ cup (40g whole almonds, roasted, chopped coarsely

150g (4 1/2 ounces) nougat, chopped coarsely

1 ¼ cup (310ml) thickened (heavy cream)

1 cup (135g) Frozen raspberries

Method

Line base and sides of 14cm x 21 cm (5 ½ inch x 8 ½ inch) loaf pan with foil or baking paper, extending foil 5 cm (2 inches) over two long sides.Blend or process cheese and sugar until smooth, then transfer to a large bowl. Stir in nuts and nougat.Beat cream in a small bowl with electric mixer until soft peaks form. Fold cream into the cheese mixture, then fold in raspberries.Spoon mixture into pan, cover with foil and freeze until firm. Slice parfait, then refrigerate about 30 minutes before serving to soften slightly.

Tip - it is fine to use just one 300ml carton of cream for this recipe. The parfait can me made a week ahead up to step 3.

Slice with a knife that has been dipped in hot water, before allowing to soften in the refrigerator (step 5)

Serving suggestions - You can serve this with fresh raspberries or with a raspberry compote. For a compote, cook 2 ½ cups (330g) Frozen raspberries, and ½ cup (55g) caster) superfine) sugar in medium saucepan, stirring, over a low heat, until berries are very soft/ Push mixture through coarse sieve into medium bowl, discard seeds. Just before serving, stir 500 g fresh raspberries into berry sauce.
